Mozzarella en Carozza


4 slices of fresh white bread, crusts removed

2 slices fresh mozzarella, 1/3-inch thick

2 slices of prosciutto

4 leafs fresh basil

2 eggs

2 tablespoons heavy cream

1/2 cup flour

Vegetable oil for frying

Parmigiano-Reggiano cheese, grated

Lemon slices


Place two slices of white bread on a clean work surface. Place a slice of mozzarella on each slice of bread, and then repeat with a slice of prosciutto. Top with two pieces of basil each. Cover with remaining two pieces of white bread to create a sandwich. Beat eggs very well and mix with heavy cream. Carefully dip each sandwich in the eggs and then the flour. In a sauté pan, warm vegetable oil over medium heat. Fry the sandwiches on each side until golden brown. Allow to settle for two minutes and then cut diagonally across. Sprinkle with Parmigiano-Reggiano, and garnish with lemon slices. Serve with marinara sauce.
